Ingredients and spices that need to be Take to make Okonomiyaki:

  1. For store bought batter:
  2. 100 g Okonomiyaki flour
  3. 100 ml water
  4. 1 egg
  5. 300 g finely shredded or chopped cabbage
  6. Homemade Okonomi batter:
  7. 100 g plain flour
  8. 1 teaspoon dashi powder
  9. 1/8 teaspoon baking powder
  10. 1/8 salt
  11. 100 ml water
  12. 1 Egg
  13. 300 g finely shredded or chopped cabbage
  14. Other ingredients:
  15. 3-4 Pork belly, finely sliced or bacon rashers (optional)
  16. 2-3 mushrooms, finely diced
  17. Homemade Okonomiyaki sauce:
  18. 1 tablespoon Worcestershire sauce
  19. 2 tablespoons Ketchup
  20. 1 teaspoon light soy sauce or oyster sauce
  21. 2 tablespoons sugar (caster or granulated)
  22. Cooking the pancake:
  23. 1 tablespoon vegetable oil per pancake (or any cooking oil of choice)
  24. Toppings:
  25. Okonomi sauce (homemade or store bought)
  26. Japanese mayonnaise
  27. Sprinkle Katsuobushi (dried bonito flakes, skip if vegetarian)
  28. Aonori (dried green seaweed), optional
  29. Pickled red ginger

Steps to make Okonomiyaki

  1. To make the batter, in a large mixing bowl, add the flour, salt, baking powder and dashi powder and mix all together using a whisk. Or use ready made batter and follow instructions.
  2. Add the water and mix all of the ingredients together until well combined and set aside. Tip: if you have time cover the batter and let it rest in the fridge for at least one hour. It helps to relax the gluten in the batter and let the flavours all combine together. In the meantime you can prepare the cabbage and okonomiyaki sauce.
  3. Wash and cut the cabbage in half. Ensure you discard of the core and then finely shred the cabbage leaves. Transfer into a bowl and set aside.
  4. Thinly slice the pork belly slices and then cut the pork belly slices or bacon rashers in half. Transfer onto a plate and set aside.
  5. To make the Okonomiyaki sauce (optional) in a small bowl add the sugar, oyster sauce or light soya suace, ketchup and Worcestershire sauce. Combine and mix all together until sugar has completely dissolved and set aside. Or use store bought sauce.
  6. Once the homemade batter has been in the fridge for 1 hour. Remove from fridge and add the egg. Mix well until egg has incorporated into the batter. Now add cabbage and gently fold in. Do not over mix the batter.
  7. Using either a frying pan or hot plate, add cooking oil over medium heat. Let the oil heat up, once hot enough then spoon in half of the Okonomi batter. Shape into a circular shape. Cook for about a minute and then add pork belly slices (optional) and fry for about 3 minutes covering with a lid. If no adding any meat, cook for about 4 minutes covered with a lid.
  8. Once the meat changes colour and the bottom has nicely browned, using two spatulas, carefully turn and flip over the pancake. Cover with a lid and cook for another 5 minutes. Then remove lid after 5 minutes and flip the pancake over 1 more time. Cook for a further 1-2 minutes uncovered, then transfer onto a serving plate.
  9. Then apply okonomiyaki sauce with a spoon or silicone pastry brush, add Japanese mayonnaise in zigzagging lines, sprinkle bonito flakes. Sprinkle dried green seaweed (aonori, optional) and pickled red ginger on top for garnish. Repeat from steps 7 with the remaining okonomiyaki batter.
