  1. 3-4 cups cooked Japanese sushi or short grain rice
  2. 1/2 cup rice vinegar
  3. 1 tablespoon Mayonnaise
  4. 185 g - 200g can tuna
  5. 1 sprig spring onion, chopped finely
  6. 1 diced red bell pepper (optional)
  7. 1 diced medium avocado (optional)
  8. 1 diced medium cucumber (optional)
  9. 1 Nori (sushi seaweed sheet) (optional)
  10. Japanese rice seasoning (optional)
  11. Salt and sugar to taste
  12. 1 small rice bowl
  13. Food or cling wrap

Instructions to make Onigiri (rice ball) Surprise

  1. Prep the rice by adding cooked rice with a premix of 1/2 cup rice vinegar, 1 teaspoon of sugar and a pinch of salt. This is how I like it but there are a ton of sushi rice vinegar recipe on Cookpad that you can also try out.
  2. Prep the filling by mixing with the can tuna, Japanese mayonnaise, spring onion and diced red bell peppers. You can cheat this portion by buying a can of tuna in Mayo instead but making your own is way better.
  3. This is how it should look like and set aside for later.
  4. Prep other ingredients - avocado, cucumber and Nori. These are all optional but adds to the flavour of the Onigiri.
  5. Get your rice bowl and food wrap ready.
  6. Assembly time! Place the food wrap over the rice bowl and push it down.
  7. Proceed to fill up the bowl with your sushi rice, pressing the rice down gently to form to the shape of the bowl with an hollow space in the center when you will put the filling.
  8. Cover the filling up with more rice, then bring the food wrap over the top of the rice and twisting it to tie up the whole Onigiri.
  9. Then, use your hand to shape the Onigiri into a ball.
  10. Get your other items ready - rice seasoning (I’m using a Japanese chicken flavoured seasoning but you can use others) and your Nori. Again these are optional but enhances the flavour of the Onigiri.
  11. Open up the food wrap and proceed to add the Nori sheets and sprinkle the rice seasoning all over the Onigiri.
  12. This is how the final dish should look like. Whilst it is not traditional, it is my version where you get a surprise when bite into the Onigiri that is filled with tuna, avocado and cucumber, just like a sushi.

You will also find as your experience and confidence grows you will find yourself increasingly more regularly improvising as you go and adjusting recipes to meet your personal preferences.
