  7. 15 g vegetable oil
  8. 160 g whole milk
  9. For Pork Filling
  10. 200 g ground pork
  11. 30 ml/2 Tbsp Soy Sauce
  12. 15 ml/1tsp Oyster Sauce
  13. 15 ml/1tsp sesame oil
  14. 15 g/1tsp grated ginger
  15. 15 g/1tsp sugar
  16. 1/2 small onion
  17. 1 spring onions, chopped finely
  18. 4 shitake mushrooms

Instructions to make Nikuman

  1. FOR THE DOUGH:
    Place flour, yeast, salt, baking powder, sugar, vegetable oil and milk and mix in a blender on its lowest speed.
  2. Then increase the speed of the blender, and blend for 6 minutes. After 6 minutes the dough should not stick to the sides of the bowl. If you don't have a blender have the dough has been mixed you will need to Knead for 10-15 minutes.
  3. Take the dough out the blender and Knead pulling the dough into the middle making a ball.
  4. Oil a bowl and place the dough into the bowl. Cover the bowl with clingfilm, and let it rise in a warm place for 30-40 minutes until doubled.

    *whilst you wait for the dough to raise you can go to Step 8.
  5. After 40min time to Knock back the dough, that has doubled in size and roll out into a thick sausage roll.
  6. Then cut the down in to pieces of 30g each.
  7. Roll each piece of dough in to a ball and then with a rolling pin flatten out the ball into a 12.5cm round.
  8. FOR THE MIX
    Chop the vegetables finely, and grate the ginger. Mix well all the other ingredients, along with prepared vegetables in a bowl until a paste is formed.
  9. Final Prep
    Place 1/8 of the meat mixture in the middle of the dough. Pinch the dough to wrap the filling, and shape into a ball. Repeat for the remaining dough and filling to make 8 Nikuman balls.
  10. Place each Nikuman ball on a 7.5cm parchment paper squares and cover all the balls with some cellophane wrap or a clean tea towel for 30min to raise again.
  11. Once ready place in a hot steamer (5cm apart), and cook at medium high heat for 10-12 minutes.
